Cocoa Tree: Theobroma Cacao, Greek for “food of the gods”
The cocoa tree has been part of human culture for over 2000 years. It’s an evergreen that only grows near the equator: 20 degrees above and 20 degrees below.
The cocoa tree grows most prominently in West Africa and South & Central America. Three varieties of the tree produce the beans used to make most chocolate.
the Forastero: a bean with a fruity and bitter taste
the Crillo: a high-quality bean with a delicate taste
the Trinitero: a bean with a spicy, sharp flavor
Chocolate’s flavor is determined by the beans that produced it; the style of processing is extremely important, of course.
But our passionate love for chocolate begins at the cocoa tree.
